Ratatouille with Herbed Quinoa

Ingredients
1 aubergine, diced
1 courgette, diced
1 red pepper, diced
1 yellow pepper, diced
1 onion, finely chopped
2 garlic cloves, minced
400g chopped tomatoes (canned or fresh)
5ml olive oil
5ml balsamic vinegar
2.5ml dried thyme
2.5ml dried rosemary
Salt and pepper to taste
Fresh basil leaves, chopped for garnish
240g cooked quinoa
Method
Step 1
In a large pan, sauté onion and garlic in olive oil until softened.
Step 2
Add diced aubergine, courgette, and peppers, cook for a few minutes.
Step 3
Stir in chopped tomatoes, balsamic vinegar, thyme, rosemary, salt, and pepper.
Step 4
Simmer for 20-25 minutes until vegetables are tender.
Step 5
Serve ratatouille over cooked herbed quinoa.
Step 6
Garnish with fresh basil leaves.
