Stuffed Peppers with Quinoa and Tofu

Ingredients

2 large peppers, halved and seeds removed

100g quinoa, cooked

200g tofu, crumbled

1 small onion, diced

1 clove garlic, minced

1 tsp paprika

Salt and pepper to taste

Method

Step 1

Preheat the oven to 180°C.

Step 2

Heat olive oil in a pan and cook onion and garlic until softened.

Step 3

Add crumbled tofu, cooked quinoa, paprika, salt, and pepper. Cook for 5 minutes.

Step 4

Stuff the pepper halves with the quinoa-tofu mixture.

Step 5

Place stuffed peppers on a baking tray and bake for 25-30 minutes.
