Vegan Lentil and Sweet Potato Curry

Ingredients
1 tablespoon coconut oil
1 onion, chopped
2 cloves garlic, minced
1 tablespoon curry powder
1/2 teaspoon ground turmeric
1/2 teaspoon ground cumin
200g red lentils
400g sweet potatoes, peeled and diced
400ml vegetable stock
100g spinach
Salt and pepper to taste
Fresh coriander leaves for garnish
Method
Step 1
Heat coconut oil in a pan over medium heat.
Step 2
Add chopped onion and garlic, sauté until softened.
Step 3
Stir in curry powder, turmeric, and cumin.
Step 4
Add lentils, sweet potatoes, and vegetable stock.
Step 5
Bring to a boil, then reduce heat and simmer for 20 minutes. Add spinach.
Step 6
Season with salt and pepper.
Step 7
Serve hot, garnished with fresh coriander leaves.
