Chicken and Quinoa Salad

Ingredients
200g cooked chicken breast, shredded
100g cooked quinoa
1/2 cucumber, diced
1/2 red pepper, diced
2 tablespoons olive oil
Juice of 1 lemon
Salt and pepper to taste
Method
Step 1
In a large bowl, combine shredded chicken, cooked quinoa, cucumber, and red pepper.
Step 2
Drizzle with olive oil and lemon juice.
Step 3
Season with salt and pepper.
Step 4
Toss gently to combine.
Step 5
Divide into lunch containers.
Step 6
Serve chilled.
