Chicken and Vegetable Kebabs

Ingredients
400g chicken thighs, cut into cubes
1 red onion, cut into chunks
1 courgette, sliced
1 red pepper, cut into chunks
1 yellow pepper, cut into chunks
2 tbsp olive oil
2 cloves garlic, minced
1 tsp dried thyme
1 tsp dried rosemary
Salt and pepper to taste
Method
Step 1
In a bowl, whisk together olive oil, minced garlic, dried thyme, dried rosemary, salt, and pepper.
Step 2
Thread chicken cubes, red onion chunks, courgette slices, and pepper chunks onto skewers.
Step 3
Brush skewers with olive oil mixture.
Step 4
Preheat the grill to medium high heat.
Step 5
Grill skewers for 10-12 minutes, turning occasionally, until chicken is cooked through and vegetables are tender.
Step 6
Serve hot.
