Coconut Curry Cod with Basmati Rice

Ingredients
2 cod fillets
200ml coconut milk
1 tablespoon curry powder
1/2 onion, chopped
1 clove garlic, minced
15ml olive oil
200g basmati rice, cooked
Fresh coriander leaves, chopped (for garnish)
Method
Step 1
Heat olive oil in a pan over medium heat.
Step 2
Add chopped onion and minced garlic, sauté until softened.
Step 3
Stir in curry powder and cook for another minute.
Step 4
Add coconut milk and bring to a simmer.
Step 5
Season cod fillets with salt and pepper, then add to the pan.
Step 6
Simmer gently for 8-10 minutes, or until cod is cooked through.
Step 7
Serve coconut curry cod over cooked basmati rice.
Step 8
Garnish with fresh coriander leaves.
