Cod with Cherry Tomato and Olive Sauce

Ingredients
4 cod fillets (about 150g each)
250g cherry tomatoes, halved
50g black olives, sliced
2 cloves garlic, minced
2 tbsp olive oil
2 tbsp balsamic vinegar
Salt and pepper to taste
Method
Step 1
Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1 minute.
Step 2
Add cherry tomatoes and black olives to the skillet. Cook for 5-7 minutes, or until tomatoes start to soften and release their juices.
Step 3
Stir in balsamic vinegar, salt, and pepper.
Step 4
Season cod fillets with salt and pepper on both sides, then place them in the skillet with the tomato and olive mixture.
Step 5
Cover the skillet and cook for 6-8 minutes, or until the cod is cooked through and flakes easily with a fork.
