Ingredients
170g boneless, skinless chicken breast
150g courgette, sliced
150g red bell pepper, sliced
75g red onion, sliced
2 tsp olive oil
1 tsp dried oregano
1 tsp garlic powder
Salt and pepper, to taste
Method
Step 1
Preheat a grill to medium-high heat.
Step 2
In a small bowl, mix together the olive oil, oregano, garlic powder, salt, and pepper.
Step 3
Brush the chicken and vegetables with the oil mixture.
Step 4
Grill the chicken for 6-7 minutes per side or until cooked through, and grill the vegetables for 3-4 minutes per side or until tender.
Step 5
Serve the chicken and vegetables together and enjoy!
