Herb-Crusted Pork Tenderloin with Steamed Vegetables

Ingredients

1 pork tenderloin (about 400g)

15g breadcrumbs (use gluten-free breadcrumbs if needed)

1 tablespoon olive oil

1 teaspoon dried mixed herbs (e.g., thyme, rosemary, oregano)

Salt and pepper to taste

200g mixed vegetables (e.g., carrots, broccoli, cauliflower)

Lemon wedges (for serving)

Method

Step 1

Preheat the oven to 200°C (400°F).

Step 2

In a bowl, mix breadcrumbs, olive oil, dried herbs, salt, and pepper.

Pat pork tenderloin dry with paper towels.
