Ingredients
2 salmon fillets (120g each)
1 lemon, sliced
1 tbsp olive oil
1 tsp dried dill or parsley
150g quinoa, cooked
100g steamed broccoli
1 handful spinach
Method
Step 1
Preheat the oven to 200°C. Place the salmon fillets on a baking tray lined with parchment.
Step 2
Drizzle with olive oil, top with lemon slices, and sprinkle with dill. Bake for 15 minutes.
Step 3
Serve the salmon over a bed of quinoa, spinach, and steamed broccoli.
