1 whole chicken
1 lemon, halved
2 tbsp olive oil
1 tsp dried thyme
3 carrots, chopped
2 parsnips, chopped
2 red onions, quartered
Preheat oven to 190°C. Place lemon halves inside the chicken, rub with olive oil and thyme, and roast for 1 hour 30 minutes.
Add root vegetables to the roasting tray halfway through cooking.
Ensure the chicken is cooked through throughly before serving
