Lentil and Sweet Potato Soup

Ingredients
240g green lentils, cooked
1 large sweet potato, diced
1 onion, finely chopped
2 garlic cloves, minced
1 red chilli, finely chopped
1.2 litres vegetable stock
400ml canned chopped tomatoes
5ml ground cumin
2.5ml ground turmeric
Salt and pepper to taste
Fresh coriander, chopped for garnish
Method
Step 1
In a large pot, sauté onion, garlic, and red chilli until softened.
Step 2
Add diced sweet potato, cooked lentils, vegetable stock, chopped tomatoes, cumin, turmeric, salt, and pepper.
Step 3
Bring to a boil, then reduce heat and simmer for 20-25 minutes until sweet potato is tender.
Step 4
Using a hand blender, blend soup until smooth.
Step 5
If too thick, add more vegetable stock to reach desired consistency.
Step 6
Serve hot, garnished with fresh coriander.
