Lentil Bolognese with Spaghetti

Ingredients
120g spaghetti
200g dried green lentils
1 onion, finely chopped
2 garlic cloves, minced
400g canned chopped tomatoes
15ml tomato purée
5ml balsamic vinegar
2.5ml dried oregano
Salt and pepper to taste
Fresh basil leaves for garnish
Method
Step 1
Cook spaghetti according to package instructions.
Step 2
Cook lentils according to package instructions, then drain and set aside.
Step 3
In a large pan, sauté onion and garlic until softened.
Step 4
Add chopped tomatoes, tomato purée, balsamic vinegar, oregano, salt, and pepper.
Step 5
Simmer for 15-20 minutes until the sauce thickens.
Step 6
Stir in cooked lentils and heat through.
Step 7
Serve lentil Bolognese over cooked whole wheat spaghetti.
Step 8
Garnish with fresh basil leaves.
