Lentil Loaf

Ingredients
240g green lentils, cooked
1 onion, finely chopped
2 garlic cloves, minced
1 carrot, grated
1 celery stalk, finely chopped
60g oats (gluten-free if needed)
30ml tomato ketchup
15ml soy sauce
5ml Worcestershire sauce (vegan if needed)
5ml Dijon mustard
Salt and pepper to taste
Fresh parsley, chopped for garnish
Method
Step 1
Preheat the oven to 180°C (350°F).
Step 2
In a large bowl, mash cooked lentils with a fork.
Step 3
Add onion, garlic, carrot, celery, oats, tomato ketchup, soy sauce, Worcestershire sauce, Dijon mustard, salt, and pepper.
Step 4
Mix until well combined.
Step 5
Press mixture into a loaf tin lined with parchment paper.
Step 6
Bake for 40-45 minutes until firm and golden.
Step 7
Allow to cool slightly before slicing.
Step 8
Garnish with fresh parsley before serving.
