Quinoa Salad with Chickpeas and Avocado

Ingredients
120g cooked quinoa
120g chickpeas, drained and rinsed
1/2 avocado, diced
1/2 cucumber, diced
Handful of cherry tomatoes, halved
Juice of 1 lemon
15ml olive oil
Salt and pepper to taste
Fresh parsley, chopped (optional)
Method
Step 1
In a large bowl, combine quinoa, chickpeas, avocado, cucumber, and cherry tomatoes.
Step 2
Drizzle with lemon juice and olive oil.
Step 3
Season with salt and pepper, and toss to combine.
Step 4
Garnish with fresh parsley if desired.
Step 5
Serve chilled.
