Quinoa Salad with Roasted Vegetables

Ingredients
200g quinoa
1 red pepper, diced
1 yellow pepper, diced
1 courgette, diced
1 red onion, sliced
2 tbsp olive oil
Salt and pepper to taste
Juice of 1 lemon
Fresh parsley for garnish
Method
Step 1
Preheat the oven to 200°C (400°F).
Step 2
Cook quinoa according to package instructions and set aside.
Step 3
Toss diced vegetables with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes until tender.
Step 4
In a large bowl, mix cooked quinoa with roasted vegetables.
Step 5
Drizzle lemon juice over the salad and toss to combine. Garnish with fresh parsley before serving.
