Spicy Chicken Lettuce Cups

Ingredients
400g chicken breast, diced
2 tbsp soy sauce (gluten free if needed)
1 tbsp sesame oil
1 tbsp sriracha sauce
1 tbsp honey
1 tsp ginger, minced
2 cloves garlic, minced
4 spring onions, chopped
15g peanuts, chopped (optional)
8 large lettuce leaves
Method
Step 1
In a bowl, whisk together soy sauce, sesame oil, sriracha sauce, honey, minced ginger, and minced garlic.
Step 2
Add diced chicken breast to the bowl and toss to coat evenly. Let marinate for 15 minutes.
Step 3
Heat a nonstick frying pan over medium heat. Add marinated chicken and cook for 6-8 minutes, stirring occasionally, until cooked through.
Step 4
Stir in chopped spring onions.
Step 5
Spoon chicken mixture onto lettuce leaves, dividing evenly.
Step 6
Garnish with chopped peanuts if desired.
