2 medium eggs
30g fresh spinach leaves, chopped
40g sliced mushrooms
1/4 onion, finely chopped
5ml olive oil
Salt and pepper to taste
Heat olive oil in a non-stick frying pan over medium heat.
Add onions and mushrooms, cook until softened.
Add spinach and cook until wilted.
In a bowl, beat the eggs with salt and pepper.
Pour the eggs into the pan over the vegetables.
Cook until the omelette is set, then fold in half.
Slide onto a plate and serve hot.
