Tofu Scramble with Spinach and Mushrooms

Ingredients
200g firm tofu, crumbled
1 tbsp olive oil
1 small onion, diced
100g mushrooms, sliced
1 cup spinach
1 tsp turmeric
Salt and pepper to taste
Method
Step 1
Heat olive oil in a pan over medium heat. Add the onion and cook until softened.
Step 2
Add the mushrooms and cook until tender.
Step 3
Add the crumbled tofu, turmeric, salt, and pepper. Cook for about 5 minutes.
Step 4
Stir in the spinach and cook until wilted. Serve hot.
