Winter Vegetable & Chickpea Stew

Ingredients
1 tbsp olive oil
1 onion, diced
2 garlic cloves, minced
1 courgette, sliced
2 carrots, sliced
2 parsnips, diced
1 tin (400g) chickpeas, drained
1 tin (400g) chopped tomatoes
500ml vegetable stock
1 tsp smoked paprika
1 tsp thyme
Method
Step 1
Heat olive oil in a pan and sauté onion and garlic.
Step 2
Add carrots, parsnips, courgettes and smoked paprika, cooking for 5 minutes.
Step 3
Stir in chickpeas, chopped tomatoes, thyme, and stock. Simmer for 25 minutes.
