Beef and Black Bean Tacos

Ingredients
400g beef mince
1 onion, diced
2 cloves garlic, minced
1 red pepper, diced
1 can (400g) black beans, drained and rinsed
1 tbsp chilli powder
1 tsp cumin
Salt and pepper to taste
8 small corn tortillas (gluten free if needed)
Optional toppings: shredded lettuce, diced tomatoes, grated cheese (or dairy free alternative), salsa
Method
Step 1
In a large frying pan, cook beef mince over medium heat until browned. Drain excess fat.
Step 2
Add diced onion and minced garlic to the pan. Cook for 2-3 minutes until softened.
Step 3
Stir in diced pepper, black beans, chilli powder, and cumin. Cook for another 5 minutes.
Step 4
Season with salt and pepper to taste.
Step 5
Warm corn tortillas in a microwave.
Step 6
Spoon beef and black bean mixture onto tortillas. Add desired toppings.
