Black Bean and Quinoa Stuffed Peppers

Ingredients
4 large peppers, halved and deseeded
240g cooked quinoa
240g canned black beans, drained and rinsed
1 red onion, finely chopped
1 red chilli, finely chopped
2 garlic cloves, minced
5ml olive oil
5ml ground cumin
2.5ml smoked paprika
Salt and pepper to taste
Fresh coriander, chopped for garnish
Lime wedges for serving
Method
Step 1
Preheat the oven to 180°C (350°F).
Step 2
In a large pan, sauté onion, garlic, and red chilli in olive oil until softened.
Step 3
Stir in cooked quinoa, black beans, ground cumin, smoked paprika, salt and pepper.
Step 4
Fill each pepper half with the quinoa-black bean mixture.
Step 5
Place on a baking tray and bake for 25-30 minutes until peppers are tender.
Step 6
Serve hot, garnished with fresh coriander and lime wedges.
