Ingredients
1 tortilla wrap
1 egg
2 bacon slices
2 tbsp tomato puree
4 cherry tomatoes
1 tsp olive oil
30g rocket
Salt and pepper to taste
Method
Step 1
Preheat the oven to 200 degrees. Cover a baking tray with baking paper and add the tortilla.
Step 2
Brush the oil over the tortilla and bake for 3 minutes until slightly golden.
Step 3
Combine the puree with salt and pepper. Turn the tortilla over and spread the paste evenly, leaving 2cm free around the edge.
Step 4
Break the egg onto the centre of the tortilla and bake for 10 minutes until the egg has set.
Step 5
Scatter over the tomato and rocket and serve.
