Ingredients
2 medium sweet potatoes
100g hummus
50g cherry tomatoes, halved
50g cucumber, sliced
2 handfuls of salad leaves
1 tsp olive oil
Method
Step 1
Bake sweet potatoes at 200°C for 40 minutes until soft.
Step 2
Split open and top with hummus, cherry tomatoes, and cucumber.
Step 3
Drizzle with olive oil before serving on a bed of lettuce leaves
