Smashed Avocado and Boiled Egg on Toast

Ingredients
1 slice of bread
Half a medium avocado
1 medium egg
Method
Step 1
Fill a small to medium saucepan with cold water and place the egg in the water
Step 2
Bring the water to the boil and simmer for 7 minutes. Carefully remove the egg from the water and allow to cool
Step 3
Whilst the egg is cooling, toast the bread.
Step 4
Carefully cut the avocado in half, remove the stone and scoop out the inside and place in a bowl.
Step 5
Using a fork, mash the avocado and season with salt and pepper to taste.
Step 6
Spread the toast with the smashed avocado.
Step 7
The egg should now be cooled, so remove the shell and slice.
Step 8
Place the egg slices on top of the avocado and serve
