Smoked Salmon and Avocado Wrap

Ingredients
150g smoked salmon
1 ripe avocado, sliced
2 large wholemeal wraps (or gluten-free wraps)
Handful of baby spinach leaves
2 tablespoons Greek yogurt (or dairy-free yogurt)
Zest of 1 lemon
Salt and pepper to taste
Method
Step 1
Lay out the wraps and divide spinach leaves between them.
Step 2
Spread Greek yogurt evenly over the spinach.
Step 3
Top with smoked salmon, avocado slices, and lemon zest.
Step 4
Season with salt and pepper.
Step 5
Roll up tightly and cut in half.
Step 6
Pack in lunch containers with a side salad or veggies.
