Spicy Chickpea and Spinach Stew

Ingredients
240g canned chickpeas, drained and rinsed
200g chopped tomatoes (canned or fresh)
120g baby spinach leaves
1 onion, finely chopped
2 garlic cloves, minced
1 red chilli, finely chopped
5ml olive oil
5ml curry powder
2.5ml ground cumin
2.5ml paprika
Salt and pepper to taste
Fresh coriander, chopped for garnish
Cooked brown rice for serving
Method
Step 1
In a large pan, sauté onion, garlic, and red chilli in olive oil until softened.
Step 2
Add curry powder, cumin, and paprika, cook for 1 minute.
Step 3
Stir in chopped tomatoes and chickpeas.
Step 4
Simmer for 15-20 minutes until flavours combine and stew thickens slightly.
Step 5
Add baby spinach leaves and cook until wilted.
Step 6
Season with salt and pepper.
Step 7
Serve over cooked brown rice.
Step 8
Garnish with fresh coriander.
