Stuffed Portobello Mushrooms

Ingredients
2 large portobello mushrooms
100g spinach leaves
1/2 red pepper, diced
50g feta cheese, crumbled
1 tablespoon olive oil
1 clove garlic, minced
Salt and pepper to taste
Method
Step 1
Preheat the oven to 200°C (400°F).
Step 2
Remove stems from portobello mushrooms and place on a baking tray.
Step 3
In a pan, heat olive oil over medium heat.
Step 4
Add minced garlic and diced pepper, sauté until softened.
Step 5
Add spinach and cook until wilted.
Step 6
Season with salt and pepper.
Step 7
Divide spinach mixture among mushrooms, top with crumbled feta.
Step 8
Bake for 15-20 minutes, until mushrooms are tender.
Step 9
Serve hot.
