Ingredients
2 medium wholewheat tortillas
120g black beans, drained and rinsed
120g mashed sweet potato
Handful of baby spinach leaves
Salsa for serving
Method
Step 1
Lay out tortillas and divide black beans, sweet potato, and spinach between them.
Step 2
Roll up into burritos.
Step 3
Optional: lightly toast in a panini press.
Step 4
Serve with salsa on the side.
