Teriyaki Glazed Salmon with Stir-Fried Vegetables

Ingredients
2 salmon fillets
30ml teriyaki sauce
15ml soy sauce (or tamari for gluten-free)
10ml honey
1 tablespoon olive oil
1 broccoli head, cut into florets
1/2 courgette, sliced
Cooked rice, to serve
Method
Step 1
In a bowl, mix teriyaki sauce, soy sauce, and honey.
Step 2
Place salmon fillets in a shallow dish and pour the sauce over them. Marinate for at least 30 minutes.
Step 3
Heat olive oil in a pan over medium-high heat.
Step 4
Remove salmon from marinade and cook for 3-4 minutes per side, or until cooked to your liking.
Step 5
Remove salmon from the pan and set aside.
Step 6
In the same pan, stir-fry broccoli florets and courgette until tender.
Step 7
Serve teriyaki glazed salmon over cooked rice with stir-fried vegetables.
