Tofu and Vegetable Skewers with Peanut Sauce

Ingredients
200g firm tofu, cubed
1 red pepper, cut into chunks
1 courgette, cut into rounds
1 red onion, cut into wedges
30ml soy sauce
15ml maple syrup
15ml lime juice
5ml sesame oil
Peanut sauce for dipping
Method
Step 1
In a bowl, whisk together soy sauce, maple syrup, lime juice, and sesame oil.
Step 2
Thread tofu, pepper, courgette, and onion onto skewers.
Step 3
Brush skewers with marinade and let sit for 15 minutes.
Step 4
Grill or bake skewers for 10-12 minutes, turning halfway through.
Step 5
Serve with peanut sauce for dipping.
