Ingredients
240g canned tuna, drained
240g canned white beans, drained and rinsed
1/2 red onion, finely chopped or sliced
Handful of cherry tomatoes, halved
Handful of baby spinach leaves
Juice of 1 lemon
15ml olive oil
Salt and pepper to taste
Fresh parsley, chopped for garnish
Method
Step 1
In a large bowl, combine tuna, white beans, red onion, cherry tomatoes, and spinach.
Step 2
Drizzle with lemon juice and olive oil.
Step 3
Season with salt and pepper, toss to combine.
Step 4
Garnish with fresh parsley before serving.
