Vegetable and Chickpea Tagine

Ingredients
1 onion, finely chopped
2 garlic cloves, minced
1 red pepper, diced
1 courgette, diced
1 carrot, diced
400g canned chopped tomatoes
240g canned chickpeas, drained and rinsed
60g dried apricots, chopped
5ml harissa paste
5ml ground cumin
2.5ml ground cinnamon
Salt and pepper to taste
Fresh coriander, chopped for garnish
Cooked couscous for serving
Method
Step 1
In a tagine or large pot, sauté onion and garlic until softened.
Step 2
Add diced pepper, courgette, and carrot, cook for a few minutes.
Step 3
Stir in chopped tomatoes, chickpeas, dried apricots, harissa paste, cumin, cinnamon, salt, and pepper.
Step 4
Simmer for 20-25 minutes until vegetables are tender.
Step 5
Serve over cooked couscous.
Step 6
Garnish with fresh coriander.
